Reading OrientDB documentation I found a REST API to modify log level without restarting the service. The API requires root authentication.
I think this can be very useful to investigate problems by getting more logs without restarting the container.
In many cases when the container is restarted the reproducibility decrease.
We can use authorization to filter such an API.

This feature is provided by changing the log level in the configuration.

@andrea.dellamico@isti.cnr.it is just a matter of playbook or we have to modify some files in smartgears-distribution?

I'm not sure I understand the question. the logback configuration that supports on the fly changing of the log level is distributed by ansible. When you change it manually you have to change it back when your're done, or run the playbook tasks that install logback.xml.
